We love brunch at Tailor Made Living and this fresh Smoked Salmon Flatbread recipe, inspired by Camille Styles the doyenne of all things lifestyle, is brilliant for weekend gatherings with friends and family.
Tasty and speedy recipes is exactly what you need when you're entertaining. Here we are saving time by using premade pizza dough to make the flatbread. By all means make your own dough from scratch but I find that this hack saves precious time that can be allocated elsewhere before guests arrive.
One portion will serve six as part of a brunch style buffer or cut into small pieces and serve as a canapés.
- 1 ball premade pizza dough
- 200g salmon
- 200g cream cheese
- 200g sour cream
- Zest of 1 lemon + juice for seasoning
- Handful of chives
- 2 tbsp capers
- 1 Red onion
- 1/2 cup of cider vinegar
- 1tbsp sugar
- 1 and 1/2 tsp salt
- Dill to garnish
Turn the oven up to 180C Fan and stretch the pizza dough into a rectangle shape, pop it on a baking tray. Brush with olive oil and cook according to packet instructions until golden brown.
While the dough is cooking thinly slice the red onion and pickle for about half and hour in 1/2 cup of vinegar, 1 tbsp of sugar and 1 and a half tsp of salt. The liquor will make the onions sweet and tangy. Use them to garnish the flatbread before serving.
Once the flatbread is ready, remove from the oven and allow to cool. In a bowl mix the cream cheese, sour cream, finely chopped chives and lemon zest. Add a squeeze of lemon and season according to taste.
Put the dough on a board and assemble by spreading the cream cheese mixture over your flatbread, followed by smoked salmon. Then scatter the capers, drained red onions and dill over the top. Add a final twist of black pepper and lemon zest. Serve with mimosas and enjoy!
